Godzilla taking on the Evas, would Godzilla wipe the floor with the three Evas or would the Evas beat Godzilla into a bloody pulp?

By 'the three', I take it you mean Unit-00, Unit-01, and Unit-02. These three units alone beat down every Angel that came their way. A pretty good record so far...

Could Godzilla even break through the Evas AT-Field? AT-Fields are essentially impenetrable. In End of Evangelion tank and artillery shells rolled off Unit-02 like water off of a duck's back. Only Beings who have the ability to corrode AT-Fields (ie, Angels) can harm an Evangelion.

Evas are god-machines, near-limitless, and almost beyond human comprehension. One Eva would be more than a match for Godzilla.

In Evangelion 2.0, Shinji ends up getting so pissed at the universe he very nearly attains Godhood along with causing the end of days. Godzilla doesn't stand a chance.
