or did the soundtracks by Steven Jalbonsky were the best things from the movies that actually made the movies to what they are today?

Hardly the only thing good about them, but they certainly helped. ;)

This. They're probably like my third favorite thing about the movies. The CG and explosions come first though.

I also thought the score enhanced the movie experience, but it wasn't the single best thing about them.

The scores are great and probably highly underrated by the general audience. Definitely one of the best things but certainly not THE best thing.

The music definitely made the movies better. I love the scores. Scenes such as the intro for the first movie, Frenzy hacking the computers on Air Force One, the Autobots arriving on Earth, Optimus arriving and transforming in Mission City, and Optimus parachuting into Shanghai (among countless others) wouldn't have been half as awesome without the great music.
