Well, I'm a big fan of the Earthsiege/Starsiege franchise by Sierra-Dynamix. Though the aren't technically "mechs" (They are Humanform-Emulation Roboticized Combat Unit with Leg-Articulated Navigation, or HERCULANS, but they are refered to as merely "Hercs"), it's the same basic thing. In Earthsiege and Earthsiege 2, you can modify your Hercs weapons to defend the Earth from the Cybrid invasions. In Starsiege, it gets more complex. You can customize your Hercs weapons, internal components, firing chains, even their paint job. You also have the option of piloting a tank instead. They're supposed to be coming out with the next game in the series, Starsiege: 2845, sometime in the next couple of years, hopefully sooner. Anyway, there's my two cents.

How about Mech Warrior? Mech Warrior 2 is kind of a old game and the graphics arnt so good now, that would be the same for the expansion Ghost Bears Legacy. But there is the more modern Mech Warrior games like Mercenaries, they are really good. You can add different weapons and use them.

Then there is Chrome Hounds for the Xbox 360......wowsors.

You might want to check out Exteel. I'm a beta tester for the game, and though it is currently down due to the closed beta test finishing, the open beta will begin in a few weeks (2, I think). You customize your mechs with better parts, weapons, and skills. The game is heavily Gundam-inspired and a lot of fun. You should check it out.

An older one you might like is Shogo: Mobile Armour Division. It's by Monolith and uses the Lithtech engine, so you know it has to be good.

WOW! Exteel looks awsome. I'll be keeping an eye on this one for sure now that you bring it to my attention. Much appreciated. I knew nothing of it.

If you like tactics games (rts like command and conquer, but in this you are deployed with crew members, and have no base), i highly reccomend mech-commander 2. you can get it from walmart for like $10. but the game is great, you pick pilots that each have their strong and weak points, mechs, armor, weapons, everything. great game, online multiplayer is fun too.

Also as someone mentioned before, exteel is a good reccomendation.

I know that armored core 4 is coming out really soon too.

It's an older game, but Starseige is pretty neat. Mechs and tanks are a bit ugly, but it's still a good game. Plus a good storyline. :D
