If you haven't finished Portland yet, don't do any Staunton missions! Once you kill Salvatore, the Mafia will be after you, and their shotguns HURT.
Go back to Portland and finish all you need to do (El Burro mission, secret Dog Food missions, Police and Fire missions (20 fires and enough police to get 2 Bribes at the hideout), Unique jumps, and packages. Trust me, it's a lot easier to do those without the Mafia on your ass.
You can still do them later, but it requires thinking 'How can I do this and avoid Saint Marks?' which sometimes requires using a tank in the first El Burro race and pushing the van down the freeway that goes through Red Light and Chinatown.

That's exactly what I'm doing. I'm trying to do the Turismo race for El Burro but not having much luck (every vehicle I drive rolls over far too easily)....
