I also find Mobile Suit Gundam's opening theme song very catchy. It's so 70s but it's great. Incidetally, I'm 16 episodes into the series and I must say I'm very impressed by the quality of the story. It's tied with Macross for my favourite anime.
The opening theme to Macross had that epic feel to it, and surprisingly ages well after all these years. That low baritone voice of Makoto Fujihara (?) just gives it that feel of a widespanning space opera. At the risk of having SW fans hunting me down with blasters in hand, I dare say that, IMO, the Macross theme is even more epic than the SW theme.
The only Gundam series I've ever watched was Seed, and Seed Destiny. I'm not sure how it compares to the original Gundam, but the selection of songs were very suitable to the mood of the show. I inadvertently find myself humming to the ending song "River" at the end of each episode.

I have multiple CD's and large MP3 folders for both. (including a disco remix CD of the opening and closings for Gundam's MS thru Double Zeta)
MacPlus's OST was what hooked me into becoming a Yoko Kanno fan. Barring Mari Iijima, Kanno is one of the more "quality" singers who've worked on Macross themes. Her idea of using fictitious Zentraedi lyrics stands her out as one of the more innovative performers.
The more mainstream ones like May'n are cute and cuddly 'n all, but IMO these really don't add much to Macross's music universe.
