-Mirage, Ramjet, Rodimus, Grimlock, Starscream, Voyager Megatron, Voyager Prime, Astrotrain, Bumblebee, Cliffjumper--In that order from best to worst...
Probably skip:
-Megatron vs. Prime two pack
On the Fence:
-Classics Devastator 5 pack
If you can find:
-Classics Re-Issue G1 Soundwave a must
-Classics minicons are all cool, if you like Minicons, first animal minicons so that was cool...
-Classics Legends Whirl, Lio Convoy, Fireflight, and Jetfire are my main recommendations from there.
Really you can't go wrong with the CLASSICS line, and you started out right by getting Jetfire.
I can't help you out with the buying portion, I am keeping mine MISP, my extras that is.

Well, I only own two from the line (Bumblebee and Astrotrain), but based off what I've heard, read and seen, these are the other ones that rate consistently as must-buys:
Optimus Prime
Megatron
Ultra Magnus vs. Skywarp 2-pack
Ramjet
Bumblebee (Cliffjumper is a repaint of the mold, so it might be more feasible for you to buy him, or you could always buy both)
Mirage
Basically, though, they're all good. They also tend to be very hard to find for the most part, so I'd recommend grabbing whatever Classics you can find that you like the look of and can afford.
Note: the Prime and Megs in the "Ultimate Battle" box set (the one that comes with the DVD) are completely different figures to the ones I mentioned above, and are generally agreed to be inferior to those ones. Still, if you find the box set going cheap, I recommend it. It's actually one of the few things I'd think about keeping MIB, because it looks excellent that way.

get them all you won't be disapointed each brings their own merits to the entire line.
My favorites have been
Mirage - really sleek looking design and highly poseable. A very fun figure to play with. The Botcon exclusive is a clear blue version to simulate his invisibility.
Rodimus - always been a favorite character of mine and the classics version keeps the sleek look of his alt mode and in bot mode he looks much more beefy and looks like a warrior. Not as poseable but a far cry better than his G1 toy.
Starscream - best version of the seeker mold to date. Get your hands on every character made if you can. Botcon has come and gone so the exclusives are pricy right now but a worthy purchase when you can find them.
Jetfire - you already have this guy but was an excellent toy.

What is the official count of how many transformers are there in total for the classics line?

Depends on if you count the minicon packs and the Botcon Exclusives...
Of those readily available in stores, there were 8 Autobots and 3 Autobot minicon 3-packs; and 10 Decepticons (counting Devastator as 5) plus the 3 Decepticon minicon 3-packs. Add another 5 Decepticons from Botcon with Classics molds, even more figures for Botcon Redecos, etc....
Good luck collecting--they're seriously the best line in a LONG time.
