Drop-in/out co-op generally means that instead of having to setup a dedicated co-op game, you will just be able to join a friend that is already playing and when you leave they will be able to continue the game without it ending because a player left as is the case with some games.
According to xbox.com it can support 3 player online co-op but no offline split-screen appears to be available which is a shame as I could easily talk some friends into coming round and having a bit of a session but none of them are interested enough in Transformers (shocking, I know!) to buy a copy of their own

I think that the name change for Wii is less to do with the terminology and more to do with the stated:

I am going to assume from this that due to the differences in hardware and capability that Next Level has had to alter the game enough for the Wii that High Moon has requested the game to be treated as a different title all together. Thus altered title and new package art.

Have the PC system requirements been announced yet? Although I am going to wait for reviews to see if the PC version is good and see if it hits Steam.

Well, that makes sense. Either way, I cant wait for this game! The footage of the opening scene in the gameplay looked frekn awesome! Explosions everywhere!

None of that made sense. It has a T rating, just like all the other versions. I seriously doubt removing the word "War" had anything to do with parents not liking it, otherwise they'd remove it from all other version. And since I know someone will bring it up, if the word "War" was removed because it's a Nintendo console, explain the DS version.
