I guess it depends what you mean by YouTube shows
Do you mean like actual ongoing series? As in fiction? Or just YouTube channels in general?
It would also help to know your interests. There's a lot of great YouTube channels out there for most hobbies/interests, even some relatively niche ones.

I stay away from anything that is a reaction or box/package/trading card "opening videos". Don't give a "F" about others reactions to something they have seen, opened, etc.. Bunch of attention whores trying to get their 15 minutes of fame is all they are. I mostly look for 80's music videos or reviews (rot reactions) of new Transformers.
Not a sheeple.
Think for yourself, don't let the magic TV box and social media do the thinking for you.
Question EVERYTHING!!
Just because you have a youtube review channel doesn't make you special.
I look forward to attending a Botcon soon only to settle matters with several idiots in person (yes this is a threat).

Would I be correct in assuming that such "reaction videos" (god I hate those) partake in copyright infringement by using footage without permission? For that matter, "compilations" of videos not by the uploader himself? I do like unboxings if the box has content for future videos of the channel in question, BensKOllectables for instance.
I mostly look at toy reviews, candy model kit construction videos, the first part of video game longplays (kinda like renting one to see if I would like it) even if they're emulated, Retro Game Mechanics Explained (basic understanding of Assembly enhances the fun), and subtitled anime and Tokusatsu from Japan.
My wife's currently hooked on parrot videos, but she also looks at videos for nail art and hair, and being creative with resin.

Here are some suggestions:
The Final Bosman
Its made between 2013 and 2016.Its a show that talks about the video game landscape and uses it as a platform to talk about how we as people relate to media and how it affects us.
Its just a fun thing to watch, here is a episode that you could use to get a feel for the series, you don't need the watch the previous ones for this one.
Virtual Legality
The lawyer Richard Hoeg uses his channel to talk about movie, media and other news through a legal view.He is pretty level-headed.He has his opinions, but he very good at taking a nuanced look at subjects he talks about.
Here is a good example.

I think that if they limit how much they show, it's considered fair use. but I don't know what percent of a work that would fall under.
For comedy, Team Four Star's parodys Dragon Ball Z abridged and Hellsing Ultimate Abridged are hilarous.

Nope any unboxing or reaction videos as it doesn't matter what music/video, etc is playing in the background. I honestly don't care about anyone outside my small circle to give a crap what their reactions are to movie, toys, trading cards or whatever.

If you want movie reviews I would recommend:
MovieBob whose movie reviews along with The Big Picture show where he talks about mostly geek stuff I've enjoyed for years, he's definitely not for everybody but when it comes to new movies he is IMHO the best YouTuber for current movies.
Dark Corners Reviews they mostly do bad horror reviews but they have specials that are some really great and since the pandemic they also have Streaming Reviews where they review actually good horror movies on various streaming platforms.
Rowan J. Coleman who mostly reviews sci-fi and fantasy but it's mostly about Star Trek and he is doing a huge retrospective on every movie and maybe every show very high quality and really fun as well.
Steve Shives who does reviews mostly of superhero movies and Star Trek movies. He is extremely political and is an atheist and he makes no apologies about it. He does a lot of livestreams and political shows now of days but he did release a review of both cuts of Justice League and while he hated both of them but he thought Whedon's version was better. His monthly Trek Actually is really good.
Jessie Gender is newish YouTuber whose focus is mostly on Star Trek but she also does weekly reviews of the Disney+ Marvel shows like WandaVision and The Falcon and The Winter Solider and of the various new Star Trek shows when they air. She is also an openly bisexual transgender woman so she looks at pop culture through the lens of LGBTQ+ community, she is super nice and funny.
Toy Galaxy is really good if you want the history of various multimedia franchies and short lived TV shows.

Hoeg Law has some videos on the subject

Another channel I recommend is Defunctland
https://www.youtube.com/channel/UCVo63l ... KqYhwSZ_Pg
Its a channel that mainly focus on theme parks history, but it also covers the history of the professionals of the field and some tv shows.
The level of research that this channel goes through is astounding.

I really got into watching YouTube when I moved into Seibertron HQ about a year or so ago. I usually have Youtube on my TV while I'm packaging or working on things at Seibertron HQ, which is odd to me since I never used to when I used to work at home.
Ever since WandaVision, I've been obsessed with New Rockstars "after" shows and such. I love their sense of humor. Their mid-video "commercials" for sponsors isn't my favorite, but I like them so much that it's whatever to me. https://www.youtube.com/channel/UC7yRIL ... ykymr8LPwA
I also enjoy watching Pixel Dan, my buddy MOTU Joe, PrimeVsPrime and Peaugh.
I'm subscribed to all mentioned in this post.
