Generally I've cut myself to only Transformers now...
From the past, though, I have tons of Spawn, Wrestling, and Marvel figures. I'm often tempted at the odd Spawn or Marvel character I see, but I generally pass on them now. The Marvel figures I have are mostly either related to X-men, Dr Doom or Thor. The Spawn figures are all over the spectrum as I used to buy basically any and all of them.
Ultimately, though, Transformers make me happiest. They have decent articulation in general, two modes to put them in, and I'm more familiar with the fiction they're based on than anything else.

I've got so many different types of toys but here goes. I've got almost the whole X-Men line, Exo Squad, Batman Animated, Spawn which includes the Youngblood, Wetworks and a multitude of others. Tons of video game figs. Resident Evil, Final Fantasy, Tomb Raider, Tekken, Mortal Kombat ect. Star wars figs. old and new Animated electronic banks, tons of other stuff that i can't think of or would have to go look through everything. I have hundreds of figs. probably around 500 to 750 i'd have to count them and that's not including Tfs. or Comic Books which number in the thousands. I have so much stuff i have to store most everything in boxes or 50 gallon plastic bins. I have about 40+ bins and boxes and about 20 long boxes of comics. I used to work at a comic shop when i was a kid and that's how i got most of my comics and stuff. I only had to pay the cost for most. The others i've accumulated since i was a kid. I go through and clean everything once in a while and still find things i forgot i had. I'm sure i've forgotten half of what i have. I'll try to put my collection of everything up so it can be seen. It really scares me sometimes how much stuff i have and it's hard to tell people they just have to see it!

Books, hundreds of DVDs, including nearly 150 Blu-ray and HD DVDs, and two cases full of CDs.
McQuarrie Star Wars figures, plus SW figures from major characters.
25th GI Joe - just select characters (but almost all of them).
Master Replicas ForceFX lightsabers converted to have a luxeon bulb so you can seriously duel with them.
Everything Lego Star Wars and classic LEGO Indiana Jones, plus some of the big city items like Cafe Corner, Market Street, etc...
I'm sure I'll be buying Indiana Jones figures when they come out.
I have my 80's collection with a modern twist. New GiJoes. New He-Man. Masterpiece Voltron. The new NECA turtles are on the way. I have a cool set of Thundercats figures. I really like modern incarnations of classic 80s figures.

Actually, GI Joes are my primary collectable. I had a childhood healthy collection that I managed to keep largely in tact and have since expanded to over 650 figures from 1982 to today.
TFs are a secondary hobby, that somehow has become more costly than the primary.

Re: Toys you collect besides Transformers.
For me, Transformers is my collection as a complete line. In terms of other lines that I purchase I like anything with Super Robots (Getter Robo, Grendizer, Etc.) The big vintage one for me is GoDaiKin, which I am actually getting close to completing (just the DX figures), but since an average figure is $500, it takes a lot of time and patience to get one at a decent price.
In terms of new toy lines, I stick with Super Robots, but dince these figures usually span lines, I just get the figures I like. I have almost all of the Getter Dragun figures sold and these figure are made by companies like Bandai, Marmit, and Studio Halfeye. Because of the Super Robots, I tend to get a decent amount of the Soul of Chogokin line and any other Chogokin (some of the non Super Robot stuff is cool), like THE Chogokin, etc. The funny thing is I feel I do not need to be a completist with SOC because I don't like a lot of the figures cause they are not from Super Robots. Another think that I like, that I guess you could say is a toy, is RC planes and helicopters.

My "main" collection is marvel legends and the associated spin off lines. To a lesser degree I get the DC stuff, but I'm more of a Marvel guy at heart. But Batman simply rules, and he has the best rouges gallery in comicdom, so I've got a lot of Batman too.
I try to get the "definitive" versions of each character they put out. Of course with guys like Batman, Spidey and Hulk, that means a lot of figs with similar costumes, just based on different artist's interpretations.
I have a lot of Star Wars stuff going all the way back to '77. I've tapered that off to just getting the occasional cool looking figure. I really have enjoyed the recent McQuarie stuff.
I've been getting select pieces from 25th GI Joe. It is a great collection, but I'm trying hard to avoid figs if I had them as a kid since I still have all my old Joe stuff. Snagged the Tomax & Xamot 2 pack just the other day!!
Man, I should just have work direct deposit a check to Hasbro!
I pick up the occasional anime or video game character too, but that is pretty minor.
The worst thing is that I also make custom figures, so fodder figures of any kind are always a draw. Whatever the collection, if they have interesting parts that I can use for customs I'll get them. Though I try to mostly get that stuff on clearance or in cheap lots from ebay or whatever.
