Since FansProject made a trailer armour base on the original DiaClone colored Ultra Magnus/Powered Convoy version, is there a Classic truck cab in that color variation to match it as well?

You mean a blue Classic Voyager Optimus? Not that I've seen, although KOToys has talked about making one someday.

Nope, as there's no G1 Prime version in blue aside from Diaclone Powered Convoy. The only official colors are:
Red: Optimus Prime
White: Ultra Magnus, naked
Black: Nemesis Prime
Purple: BotCon Shattered Glass Optimus Prime

No, and even the KO was only an idea, they didn't make it yet.
CLosest thing to a blue Prime is the Armada redeco:
