Sabretooth hasn't always been drawn in the comics as huge, the one from the time of that particular costume (from his solo comic) wasn't, he was pretty average height. Which is kinda strange since he was massive in the cartoon, but the comic came out at the same time (mid 90s).

you can probably chalk a lot of that up to artistic license. Different artists and all that. Also, there might be some variation depending on just how you want to potray the character. If he's acting as a big fearsome monster that our heroes have to struggle to survive fighting, play up his size. on the other hand, if your potraying him as outgunned or what have you, maybe shrink him down just a bit.

Secondly, I don't forget details about the comics I've been reading for ...30+ years now.
Now, as Blastback said, it is artistic license used in that mini series and that Sabretooth design. For example, the scale and/or perspective of that Sinister cover being all wrong. Considering it is supposed to be depicting a 6'5 character holding a 6'6 character by the throat.

AKA Toy Biz understood it, Hasbro doesn't.
It's not just about height but proportions. The image with Psylocke above is to demonstrate his physicality over someone of normal size. That's where the figure objectively falls flat.
