I think I've got them all. Even the ones from un released Castlevania games.

Simon Hell He was in a cartoon a bloody cartoon. and for the record he could have kicked Captain N's Butt.

I'd say Simon. The first, the best.

I think I'll solve this by elimination

Leon Belmont (LoI) Technically the first Belmont who was a vampire hunter. Hasn't got years of training in this mather and never faced Dracula in combat.
Sonia Belmont (Legends, Res) The First Belmont to kill Dracula. But she didn't master the sub weapons.
Trevor Blemont (CV3, CoD) It's arguable wether or not he could have done it by himself.
Christopher Belmont (CVA, CVA2) I don't know much about him. But anyway Konami tossed the GB titles aside.
Victor Belmont (Res) Unknown Belmont from a cancelled Castlevania. Wasn't even the main character.
Simon Belmont (CV1, CV2, CV4, X68k) Killed Dracula twice. He even resurected Dracula to beat the crap out of him again.
Juste Belmont (HoD) Has the combined blood of the Belmont and the Belnades. Technicaly he should be strong but he didn't face Dracula at full power. And he looked like like a wuss.
Richter Belmont (Rondo, Drac X, SotN) A very skilled but seemingly easy to crontrol Belmont.
Hanz Belmont (Bloodletting) Probably the original Leon Belmont. He wears clothings of the Cruisader.
Nathan Graves (CotM) Not a Belmont. He was pretty skilled never the less.
Reinhart Schneider (CV64, LoD) Can't say much about him. Aparently, he couldn't fight Dracula alone.
John Morris (Bloodlines) A good hunter but he couldn't handle the power of the Vampire Killer.
Jonathan Morris (PoR) Very little guy but not Very strong by himself.
Julius "J" Belmont (Aria, DoS) A clever Belmont who managed to seal The Castle of Dracula. But his fighting skills are lesser IMO.

I think that leaves Simon as the best.

Of the Belmonts, I say Simon. But Trevor was a close second, I think.
