With the exception of FF X-2 and FF-XIII-2, and the various side-story games like Crisis Core and Dirge of Cerberus, every "main" Final Fantasy is a standalone game set in vastly different universe, requiring no knowledge of the previous game to play.

You don't need to play catch up like you would Metal Gear, since each game is self-contained, there's no proper starting point or ending point. You can really just start with whatever game people suggest at you the most, which is probably going to be 6 or 7.

Nope! When I say self-contained, I mean self-contained. Unlike Elder Scrolls, the lore and fundamental rules of the universe are reset with each new game. Any references to past games are little more than in-jokes and running gags, and your experience won't be diminished for it.

XIII is being kept in its own universe with its own number, there's no indication they're going to start continuing the story from one game in an unrelated main series game. Although they have admitted XIV might include crossovers, there's nothing to suggest that this will become the norm.
Especially since XIII hasn't exactly proved to be popular, XIII-2 even less so.
