Another I'd add is the face to face meeting with Andrew Ryan in BioShock. While not a boss battle in the conventional sense, it's a highly memorable confrontation that anyone who's witnessed it will tell you.

Not a boss fight as such, but it puts most to shame.
Chaos on the spectrum, when some asshole manages to summon a Gold Dragon, it resists your Disbelieve, and you only survive because you mounted a Pegasus and sent your Vampire after it for like 20+ turns, and then when it finally dies the SOB successfully casts Raise Dead on it and gets a Zombie Dragon.
I have never shat so many bricks in my life.

the final battle against OMEGA in megaman zero 3...id really like that one to last forever

Off the top of my head, my all time fav boss battles are
-the Robotnik fights in those classic Sonics
-Xemnas, when he knocks buildings at you and whatnot
-Starscream in the Armada game... Very fun to just drive around the entire level with him swooping down and taking shots and the drone ships drop off troops as well
