So he has a 360 degree helmet that doesn't do anything if he doesn't know he's being attacked from behind. I don't think that helps him much.

So he can't multitask very well

But he clearly doesn't have the good sense to use it. He had the choice between dodging and shooting at a Jedi. This is a guy who grew up and trained during the Clone Wars, he should know shooting at a Jedi is useless. Luke would just block the shot, if not deflect it right back towards Boba's face. Instead he chose to aim his shot (Apparently assuming there was some invisible point where Luke couldn't use his Lightsaber to defend) and ignore the staff headed right for his jetpack.
Which raises the question, why is he considered the best bounty hunter in the galaxy? Shooting at Jedi and failing to dodge is the reason the CIS lost the Clone Wars. (Well, that and Palpatine playing both sides like a fiddle) You'd think Boba would have more sense than a Battle Droid. (And even Battle Droids knew the futility of fighting Jedi)

Well, on Geonosis, the Jedi were dealing with the bulk of the CIS forces. Likewise, the Clones were able to kill so many Jedi because the Jedi were so close to the Clones that the betrayal was unthinkable. Not necessarily. Most of the Jedi were in battle when they were killed by their own Clone Troopers, they wouldn't realize the threat is from the Clones. Yes, but it's exceptionally uncommon, and the Jedi Jango killed was probably not even a Knight. I mean, look what happened when he took on Mace Windu...

He got taken down by a blind man who wasn't even aware Boba Fett was near him in Return of the Jedi.
