Wheat Gluten isn't easy on humans either apparently. There's quite a few people that are allergic to it, and it's a deadly reaction, like being allergic to peanuts. Throat swells shut, hives, etc.
In general, I'm sure it must be harmless, but anything that's causing this much trouble...they need to find a substitute for.

i very much doubt it's an allergic reaction, as that would mean something is wrong with the pet and not the food(unless it's something in the food that isn't usually there, in which case it isn't a gluten allergy)
my guess is an excess of Raphides, calcium oxalate in particular, which can cuase Digestive upset, liver and kidney damage, and death...
How long do you think they were using the wheat gluten? I think calcium oxalate might be among one of the soluble oxalates. I think one of the places its found is in Rhubarb leaves, and eating the leaves is deadly. Do they add this stuff a lot to pet foods or is it an accidental contamination thing?

I'm not a botanist, but i recall that raphides are basically form from the waste substances formed by the plant and being the wheat gluten and raphides are both found in ergastically i don't think it's too much of leap of faith to suppose that the somehow the wheat glutten was contaminated with some, or the raphides not extracted, or the wheat grown is such a manner to increase the concentration of raphides in the cells.
