Although I don't know what "interperative dance" means (Babelfish also failed to understand) I guess you refer to his fighting style. Jedi of old fought in accordance with the flows of the force. IMO Anakin fights the way he does because he is accustomed to it and confident. By the time of ep 3 he was not at his first fight. On the other hand Luke had very few real battles when he faced Vader and Sidious. His style is very defensive and is very reminecent of the way samurais weild their katana. A lightsaber is a very powerful weapon that needs strenght and concentration to weild efficiently. If Anakin can swing it like it was a mere flashlight that means alot.

Anakin doesn't just swing the blade lightly: he pulls off all kinds of three ring circus stunts that have little to no application to combat, all of which leave him open to numerous counterattacks. In fact, during Revenge of the Sith, he performs one completely Retarded move that leaves him completely unable to defend himself for a full ten seconds.
Luke, conversely, maintains a proper guard, doesn't show his back, and actually makes some effort to *gasp* attack his opponent. Now, I've heard all kinds of apologetic crap about how the Jedi can fight like morons because of their preocognition, etc...Which would be fine, if their opponents didn't ALSO have precognition. All things being equal, skill is going to win out. And, frankly, as flashy and 'cool' as Anakin's fighting style looks, it's utterly nonsensical. While he's busy windmilling his blade behind his back, he is going to get stabbed.
