Beast Wars Neo also had a grilly bear, named Survive, who had a pet bat drone called True one. It also had a baddie named Elephorca who was half Elephant and half Killer Whale.
In Battle Beasts, there was an Autobot beaver named Eager Beaver.
Beast Machines Silverbolt is a "condor" but looks more like a parrot to me.

Chinese-Dragon
Basilisk
Pegasus
Chimera
Stuff like Demons, Minotaurs, Gorgons, that are semi-humaniod could be awesome if they could manage a transformation that didn't make the obvious use of the legs and arms. For example, I'd be up for seeing a Fawn-styled Transformer if the goat legs swung up and became shoulder-cannons, with the legs being hidden in the body somewhere.

Centaurs, Unicorns etc, could be cool, they would certainly be unique.
