They don't want to have to reduce the price on leftover back stock because that is seen as reducing the figures' value. Because, well, it is.
The value of the Machine Wars souvenirs right now is $10, which is absurd for something that is supposed to be an awesome keepsake souvenir of your trip out to the convention. So they want to avoid having to do anything like that again; they want the toys to retain their value for the sake of those attendees that buy them at the show so they don't feel "ripped off" later.

In a sense, this kind of question is impossible to answer. If FunPub had their way, they'd have exactly as many of every toy available so that everyone at the convention could get exactly as many of each toy as they want, but end up with zero toys left over at the end. They have raised and lowered numbers over the years as they figure out what sells and what doesn't, but there's always a bit of a guessing game about what toys will actually prove popular and which ones won't (note, for example, that the so-called "Rainmakers" had more sets made than
any other BotCon exclusive in history, yet were the only toys to sell out by the end of BotCon 2013, and had done so by the end of the day Saturday).
That said, I can't think of a precedent for a mid-day Friday sell-out, so you're probably pretty safe regardless.
