Ebay rules actually give you ten before you can claim non-payment. If you wait it out, you can get them in serious trouble.

7 days is the amount of time you need to wait.
You then file an unpaid bidder report to ebay.
Ebay contacts the buyer. The buyer then gets another 8 days to pay in response to ebay's "friendly reminder".
If the buyer still fails to respond, you then update ebay and tell them to cancel the auction. They will then credit you your final value fees and the bidder will receive a strike against their account.
For an auction ending at $300+, the final value fee can be quite a few bucks. After a certain number of strikes, they will ban a user, so this can end up helping to protect other sellers as well.
