Sweetbreads would be the term, although that usually implies that there’s other organs too - brains, liver, Heart, all together in one dish.

I just recently learned the origin of the saying, "Balls to the wall" and surprisingly it has nothing to do with testicles.
It comes from World War II bomber pilots. Certain old bomber planes had two throttle shafts topped with ball shaped knobs in the center console. One for each wing mounted engine. So, going "balls to the wall" meant pushing the engines to full throttle.
Put that in your brain sandwich, and eat it!

As for Subway ... I presume when you say "flatbread" you're talking wraps? Not that I go to Subway, I get cravings for it maybe once, possible twice a year, so I go, and get reminded that I'm not really a big fan.
