All the iterations of Star Trek afterwards were too structured, unisex, with people walking around like they have a broomstick shoved up their booties.

There was no doubt that he was in charge and knew exactly what to do in any given situation.He had an aura of complete control and I think that's very important in a position of leadership. He was completely logical in every decision he made and frequently 'out thought' his opponent.
In the movies he wasn't afraid of getting his hands dirty either but the differences between his TV and movie personalities is a debate for another time.

He had a yeoman that he could grab and hold when the ship was about to collide with something. Future iterations did not have a yeoman. He could kill or strand crew members at his discretion (eg. "Where no man has gone before"). Back then when the captain controlled the ship, he pretty much could do whatever he wanted. He did not have Starfleet looking over his shoulder.
